Tradition, creativity and indulgence
Bellini’s namesake, created in 1948 at Harry’s Bar in Venice was named after a 15th century painter famed for using glowing pink in his masterpieces. Traditionally ‘The Bellini’ consists of white peach and Italian sparkling wine; today our mixologists use the freshest produce to put a modern twist on this classic drink.
Our mixologists are the talent behind Bellini’s reputation as one of the best cocktail bars in Auckland. They keep up to date with the latest trends in cocktail making and Bellini’s cocktail list is ever changing. Mixologists experiment by getting into the kitchen and using unusual ingredients and methods of cooking to produce the flavours in drinks. Or if guests prefer, connoisseur cocktails are made by artfully mixing the best of the world’s alcoholic ingredients.

Welcome to Bellini
Bellini is a mix of modern glamour and Auckland Chic, in arguably the best location in town. Bellini could easily be described as having the best views of any bar in Auckland, featuring almost panoramic views across (Waitemata) harbour, the vantage point provided by its location at the very tip of Princes Wharf and dramatic floor-to-ceiling windows offer spectacular seascapes whatever the weather. Bellini mixes up the most fabulous location, sumptuous décor and expert bar staff to create one of the best bars in New Zealand.
Bellini’s clean, modern lines and sleek interiors were designed by Dan Kwan of Tribeca, an interior design firm based in Singapore who also designed Hilton Auckland’s restaurant, White. Mother of Pearl mosaics and warm neutral colours create a relaxing and inspirational environment.
The enticing interior opens on to extensive balconies and decks, providing all-weather alfresco dining and entertainment. Floor to ceiling windows along each side provide extensive views for those who wish to remain inside. At night-time the flickering lights of the city and harbour provide a dramatic backdrop to the immaculately dressed patrons.
It’s the place to be seen, but just far enough away from the masses of the central city and Viaduct to be a special destination with that element of exclusivity.
Bellini’s cocktail list is like no other in town, with a vast array of connoisseur cocktails, an extensive wine and beer list, and a comprehensive selection of spirits, aperitifs and digestifs. Bellini’s expert mixologists are always designing new and exciting creations, and serving up perfect renditions of old favourites, no matter how obscure.
Bellini is open seven days. Monday to Friday from 8am until late, and Saturday & Sunday from 9am until late.

Live Jazz and Swing
Ease into the weekend with the soulful grooves of Waiheke Jazz group Chocolate Fish, playing live from 7pm on Friday and Saturday nights in Bellini. Check them out on their website.
Cocktail Recipes
Chargrilled grapefruit and rose honey martini...
Chargrill 2 thick slices of grapefruit and leave to cool
When cooled, muddle grapefruit with 60ml of 42Below Pure vodka, add 2 bar spoons of rose honey
Shake vigorously
Strain into a chilled martini glass
Strawberry ginger and black pepper martini...
Cook and reduce strawberries, whole shaved ginger and crushed black pepper corns. Repeat this process 3 times until a thick ‘jam’ has been produced
When cooled store in fridge.
To make cocktails put 3 teaspoons of the mixture in a glass boston shaker. Add 75ml vodka, shake vigorously and strain into a chilled cocktail glass.
Serve straight up.
Poached apple and cinnamon daiquiri...
Infuse Havana rum with cinnamon sticks (takes 3 days, you can speed the process up by placing the bottle somewhere warm e.g. airing cupboard)
Lightly poach apples until soft
Take 2-3 apple segments and muddle in glass boston. Pour over 60ml Havana club rum, 15ml freshly squeezed lime and 15ml green apple syrup.
Shake vigorously and strain into chilled martini glass.
Blueberry & raspberry chili sour...
Reduce blueberries, raspberries and chopped ginger with samoan chili oil. Allow to cool.
Shake 3 teaspoons of the above mixture with 60ml Woodford reserve bourbon, 15ml freshly squeezed lemon juice and 15ml sugar syrup.
