ATMOSPHERE / AMBIENCE |
The bar – a different place at any time of the day or week. A quiet coffee in the early afternoon, a glass of Champagne or a cold beer al fresco at 4, a glass of Riesling and some freshly shucked oysters at five, a launch pad for a bigger night out or just a place to meet with friends and relax. You might meet a wine maker proudly pouring their wine behind the bar or Jerry Fraser shucking the freshest oysters he can get his mitts on. It's an ever changing parade.
And you are spoilt for choice when it comes to the booze. Just name your poison or let the Must crew make a suggestion. Dozens of wines by the glass, a great selection of Australian and international beers, a small and considered cocktail list plus Sherries, Brandies, Armagnacs, Absinthe, Vodkas, Rums, Tequilas and anything else you might care to ask for.
Leather banquette seating and plush ottomans provide a welcomed reprieve from life on Beaufort Street. The list of bar snacks include Andre Mahes' Charcuterie plate, Chicken Liver Parfait, Chorizo, Olives, Duck Rillettes and other tasty bites.

Opening in November 2001, this convivial vinous establishment has quickly become part of the fabric of Beaufort Street. Behind the elegant 1930's façade a long, polished she-oak bar greets you with an enticing & very personal selection of wines, spirits and beers.
The wine list features over 600 references, strongly representing the wines of France, Italy, Australia, New Zealand, Germany, Austria, Argentina, USA, South Africa and beyond. A dozen whites and as many reds are poured by the glass – Riedel - as well as Sherries and digestives. A cocktail list includes the classics as well as some signature concoctions.
The cuisine of Chef Russell Blaikie is seasonally based, contemporary with provincial French influences. The daily specials offer what produce is in its prime on any given day.
Eat a few snacks at the bar or make a meal of it in the bistro, set over two levels with crisp white table clothes and smart service to match. The mezzanine level can be converted into a private dining room for special events and if you really want something out of the ordinary, ask a waiter to take you upstairs to the Champagne Lounge.
